Truck Stop Pancakes with Homemade Blueberry Syrup

This was breakfast this morning:

What you need:
For the pancakes:

  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons butter, no rx melted
  • 2 cups buttermilk
  • 2 cups all purpose flour
  • 1 3/4 teaspoons baking powder
  • 1 3/4 teaspoons baking soda
  • pinch of salt
  • 1 tablespoon and 2 teaspoons sugar

For the syrup

  • 2 cups fresh Blueberry juice(I had made blueberry puree for Aron and saved the juice)
  • 1 cup sugar
  • 1 tsp lemon juice
  • 2 tablespoons cornstarch

To make the pancakes:

In a large bowl, site whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

To make the syrup:

Mix sugar and cornstarch in 2 quart saucepan. Gradually add water. Stir in blueberries and lemon juice. Heat to boiling over high heat. Stir constantly. Boil and stir 1 minute. Makes 3 cups.
