Pumpkin Pancakes

Can you tell that I love pumpkin?  That gourd is one of the reason why I adore this time of year!  I can’t get enough of it!

I’ve been infusing pumpkin into many of our meals lately and I thought I’d share with you all my recipe for pumpkin pancakes!

Gather up:

1 1/2 cups whole wheat flour
1/2 cup unbleached all purpose flour
3 tablespoons honey
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups milk
3 eggs, lightly beaten
3/4 cup canned pumpkin puree
1/4 cup unsweetened applesauce

Mix all the dry ingredients in a bowl and set aside. Then toss all the wet ingredients together in another bowl and whisk together.  Add the wet to the dry and stir until combined.

Heat a griddle or pan on medium heat.  When warm, drop pancakes on in 1/4 cup increments.  Turn when the top bubbles.  Cook for 1-2 minutes more and then place on your serving plate!

We ate these with this absolutely divine Buttermilk Caramel syrup from Creations by Kara.
