It’s been awhile since I’ve shared a recipe with you all, so I thought I’d write about this yummy breakfast treat that we’ve been eating quite often around here lately! It’s super simple and relatively healthy!
To make this you’ll need:
- 3 cups old fashioned oats
- 3/4 cup unbleached all purpose flour
- 3/4 cup whole wheat flour
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1 tsp salt
- 3/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 1/4 cup milk
- 2 tsp vanilla
- 2 eggs
- 3/4 cup semisweet chocolate chips
Preheat your oven to 350 degrees and lightly grease a 11X9 baking dish.
In a large bowl, mix together the oats, flour, baking powder, cinnamon, and salt. With a wooden spoon or in a mixer with the paddle attachment, cream together the butter and brown sugar in a different bowl. Add in the milk, eggs, and vanilla. Mix well. Gently fold in the chocolate chips.
Spread evenly in your greased baking dish.
Bake in the preheated oven for approximately 30 minutes. Allow to cool slightly, then cut into squares and enjoy!
It’ll go quick! Yum! This would also make a good snack or on the go treat!
